Happy 3 days before St. Patrick's Day!
You'll never believe what's happened this week. Our youngest got a fever and ear infection..........yes......again. Poor baby. I feel so bad for her when she's sick. My ultimate plan was to do a number of St. Patty's Day cocktails ahead of time and now we are 3 days away. Yikes! There goes my plan. Better late then never.
Today I creates a cocktail I call Leprechaun's Dream.
This cocktail is a little bit greener then the picture gives it credit for.
This is a light, yummy and a bit too easy to gulp down St. Patty's cocktails.....especially on a hot day like today (yes we have odd weather here...it's totally hot out).

My plan is to get you more cocktails in the next couple days and then hopefully a round up of all of my St. Patty's Day cocktails at the end.
Fingers crossed I can pull it all off. Between nurturing a sick one, a possible birthday party on Saturday and a baseball game......(why did I have to list them all out....I'm already tired just thinking about it all) wish me luck!!

Here is my Leprechaun's Dream:
- 1 1/2 ounces coconut rum
- 1 1/2 ounces pineapple orange banana juice
- 1 ounce melon liqueur
Fill up a cocktail glass with ice. Dump the ice and all three of your ingredients above into a shaker. Shake gently as to not break up the ice. Dump everything back into your glass.

Hope your young'n is feeling better soon! I'm going to get some of that juice - maybe this cocktail will give me a new appreciation for Midori :)
