Whipped Coco Mango




It's Tuesday!  

Holy Moly what a weekend we had!  

Saturday was out oldest daughters 7th birthday, yes she was born on a Friday The 13th!!  

Which I personally think is pretty darn cool.  

We decided that since it was her actual birthday, we would do both her friend and family party on the same day!  It turned out to be a beautiful day!  So beautiful in fact that for her friend part in the afternoon I wore shorts, a tank top and flip flops.........yes it was THAT nice......in February!  

Friend party was a success and then we had a slight break until the family party, which was also a success.  She had fun from the minute she woke up until the minute she went to sleep.  

Our other little princess had a blast at her older sister's party.....and then at 4:30 in the morning I heard the call that you don't want to hear at 4:30 in the morning.  

"Mom!!  I threw up!!"  

OH NO!!  

Poor thing was sick all Sunday and most of Monday.  We finally saw the outside world today which I think was good for both of us.

With such an adventurous weekend, I decided that I needed to make myself a cocktail today.  

I still had a Mango Kerns in the fridge so I thought I'd do a quick search for a cocktail online.  
I found a couple, tweeked them a bit and made this one.  

My only complaint is that I wish I would have used Mango puree instead of the Kerns.  

I tasted the cocktail and thought, "It's OK".  

I then tasted the Kerns Mango on it's own and thought "It's OK".  

That's why I didn't love love this cocktail........lesson learned.

Here is my recipe for a Whipped Coco Mango:

  • 2 ounces coconut rum
  • 1/2 ounce whipped vodka
  • 2 ounces mango nectar
  • 1/2 ounce peach schnapps
In a shaker, add ice and all of the ingredients above.  Shake and strain into a martini glass.



Here's to our daughter's 7th birthday and to our other daughters returning health!
