Can St. Patrick's Day really be tomorrow? I mean seriously?
Last night my husband (EJ) and I went to a Corned Beef & Cabbage Night dinner. It was fun! It's nice to get out every so often.
Now they didn't have any of these drinks like the Irish Car Bomb, Irish Cookie, Nutty Irishman or Irish Coffee there, but that's OK. The 7/8th vodka to 1/8 cranberry juice with an olive they gave me was just fine! WOW, I sure like a heavy hand when pouring alcohol!
Tomorrow night I will be slow cooking my Corned Beef and I can NOT wait to eat it! I got the recipe I am going to use from Stephanie over at A Year Of Slowcooking. I have made this recipe for the past couple St. Patrick's Days as well as random times during the year. I loooove this recipe so much!
